GASTRONOMY
IN FRIULI-VENEZIA GIULIA
The cuisine of this region is characterized by the fusion of the
gastronomic traditions of the Friulian hills with those of the more
refined Venetian-style fare eaten along the coast. But in this land more
important than the influences of the long rule of Venice is the
heritage of the Hapsburg empire, which was more limited in time but
more intense as far every aspect of the region's life is concerned. A
happy union also accented by the tastes of the Slavic neighbours.
Different tastes, aromas, colours: dishes that show tracks of various
cultures and traditions and which enrich the gastronomy of this region
which has been marked for ages by the passage and meeting of different
populations and, besides that, by the will of local inhabitants to protect
and preserve, for ever, the places where people can eat well and where
they can meet together: will which led to the creation of a "committee
for the defence of traditional taverns.
